I think we only hear the Harry-Voldemort prophecy in its entirety, so it's hard to be certain just how precise they normally are. For all we know, Sybil's prophecy is right at the obscure end of the scale. (Although I suppose attitudes such as McGonagall's that Divination is just a waste of time would make more sense if prophecies in general were are very vague and easy to reinterpret after the event.) Even if they are usually quite imprecise, I'm sure there'd always be a few smartarses in the Department who reckon they could interpret them properly.
