Thing is, Lupin doesn't really have to give Harry any reason for Snape hating James. Harry already knows they hated each other--and Snape hated James long before James was a rival for Lily. So it's like he jus automatically says something Harry will like by making Snape look bad and his dad look awesome and completely innocent.
I assume James pulled Snape back in human form too. But James still had plenty of experience switching to animal form to be with Remus. It's like if they faced a Dementor and James was handy with a Patronus. Yes, it's a risk to himself, but a controlled, familiar risk.
